The Best Snack Granola Ever!

 This Granola is the best I have ever made! It is perfect for snacking on or eating with yogurt. I love making my own granola. The best thing about homemade anything is that you know exactly what is going into it. I explain in my cereal granola blog all about sugar, this recipe is no different when it comes to that. I don’t really have anything amazing or earth shaking about this granola besides the sugar thing so here is the recipe. I hope you enjoy!

Ingredients!

Ok here we have 3 cups of oats and a cup each of your favorite nuts. I have here chopped almonds, chopped cashews and sunflower seeds. 

Next step is combine 1/2 cup of butter, 2/3 cup coconut sugar, 2/3 cup honey, 1 tsp of salt, cinnamon and any other spices you might like, for example ginger or pumpkin spice mixture. This picture is showing you that the coconut sugar will not dissolve all the way. Just heat everything up so that it is easy to pour.  

Pour some sugar on me!!!! then mix it up. 

If you don't have two baking sheets that is ok! Just bake half at a time. This is also the first time that I used wax paper instead of my french silpat. Big Mistake!!! Once the granola cooled it just stuck onto the paper so bad that I had to re heat it to melt the butter and sugar. If you don't have a silpat I suggest you just scrape the granola in your container right away but the bad thing about that is it will all stick together in a big clump after cooling. 

Bad news here. I fixed it though. Bake at 250 degrees F for 40 minutes stirring every 10 minutes. Remember it will only feel crunchy after it cools and all ovens are different so start with 30 minutes, you don't want to burn it!

         1 cup of chopped almonds

         1 cup of chopped cashews

         1 cup of sunflower seeds

         1/2 cup of butter

         2/3 coconut sugar

         2/3 honey

         1 tsp of salt
