Gluten Free Chicken Enchilada Casserole

          Ok I love enchiladas they seriously are one of my favorite food I think what makes them so amazing is the sauce. Well when you are married to a wonderful man like mine who suffers from "I can't hardly eat any kind of food" you are forced to make substitutions. I will tell you right now this casserole is one of my favorite substitutions ever! My mother tried it and kept saying how she did not miss the tortillas at all. I am telling you as long as you have that unforgettable sauce you are golden! This casserole is also so great because it is protein packed with vegetables and no sugar! The other great thing about this recipe is that it can easily be turned into a vegetarian dish by substituting the chicken for butternut squash. Yes, you read that right butternut squash.

Alright the first layer is cooked quinoa, make sure to salt it! 

I cooked all the filling in a separate pan. this is one onion, one green pepper, two chicken breasts, and two small cans of enchilada sauce. So easy! 

The amazing sauce will permeate the quinoa and I also put a layer of cheese in between the quinoa and the filling.

The top is just chopped black olives and plenty of shredded cheese.

Oh just look at that amazingness! If you are on a budget and you are able to eat rice you could substitute the quinoa for rice!

oooooooooohhh yeeeaaaaahhhhh you are going to be dreaming of this tonight! Top with sour cream, guacamole or salsa or all three!
